Potato Bacon Cheese Soup

Potato bacon Cheese Soup
3/4 cup butter
4 green onions chopped
1 large onion chopped
1 cup celery chopped
3/4 cup flour
7 cups milk
5 cups cut up baked potatoes(bake them the day before refrigerate peel and cut up)
1 pkg. of bacon fried and cut into pieces
2 cups grated cheddar cheese
2 tes minced garlic
1 cup sour cream
2 small cans or 1 large can mushroom pieces and liquid
1 can cream of chicken soup
1 tes. pepper
1 tes. dried basil
1/2 tes dried thyme
7 chicken broth cubes
1 tes. liquid smoke

In a large pot cook onions and celery in the butter till cooked, then add the flour for thickening.
Add the milk a little at a time till hot. Add broth cubes and everything else and cook through.
Use what you want in this soup. If you want more or less of some ingrediants Do what suits you.
When you bake potatoes leave them out to completly cool before putting in the frig as they will be
mushy.

This soup takes a while to cook as it is rich and will burn easily and makes a big pot of soup. So
give yourself plenty of time. A snowed in winter day is perfect for making it .
Also it sure isn't diet food!!
